Split Pea Ham Soup

This rich soup simmers all day in your slow cooker. Split peas are dried peas that cook more quickly than dried beans, as they are split by a machine. Because the liquid doesn't have to penetrate through the peas' skin, the peas soften easily, even in the presence of the salty ham. You can find yellow and green split peas in the supermarket. Serve this hearty soup with a spinach salad made with pears and walnuts.

1 pound split peas
2  onions, chopped
3 cloves garlic, minced
1  meaty ham bone
3  carrots, sliced
2 stalks celery, sliced
2  potatoes, peeled and chopped
2 cups chicken broth or broth made with chicken broth powder
6 cups water
1/8 teaspoon pepper
1 teaspoon dried basil
1  bay leaf
Sort over peas and rinse. Drain and combine in 5- or 6-quart slow cooker with all remaining ingredients. Cover and cook on low 8 to 9 hours or on high 4 to 5 hours. When all vegetables and the peas are very tender, remove the ham bone. Cut meat off the bone; chop and return to slow cooker.

At this point you can remove the bay leaf and purée some of the peas for a thicker soup; otherwise, serve.
