Hot Buttermilk Glaze

The baking soda added to the buttermilk in this recipe begins what looks like a science experiment. As the glaze heats up, it foams, but don't worry — no explosions! The soda thickens the glaze, and the buttermilk and sugar provide flavor. This is just the sort of glaze needed for a dense, spicy cake.

Ingredients
1 cup sugar
1/2 cup buttermilk
6 tablespoons light corn syrup
1/2 teaspoon baking soda
1/2 teaspoon pure vanilla extract
Directions
Place the sugar, buttermilk, butter, corn syrup, baking soda, and vanilla in a medium saucepan over medium heat. Bring to a boil, stirring constantly. The glaze will foam up and thicken as the sugar dissolves and the butter melts, 3 to 4 minutes.

Poke holes in the cooled cake of your choice and pour the hot glaze over it.

Pair this glaze with fruit-based cakes or spice cakes.

This recipe makes enough glaze for the top of a 12x9-inch cake.
