Cranberry Nut Bread
Fresh and dried cranberries add flavor and color to this easy bread. This beautiful bread is perfect for a holiday breakfast, particularly Christmas morning. The tart cranberries contrast really well with the sweet and tender bread; you won't miss the salt!
Ingredients
2 cups flour
1 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup butter
1 egg
1/2 cup orange juice
1/4 cup sour cream
1 tablespoon grated orange peel
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon cardamom
1 cup fresh cranberries
1/2 cup dried cranberries
1 cup chopped walnuts

Directions
Preheat oven to 350°F. Spray a 9- x 5-inch loaf pan with nonstick baking spray containing flour.
In a large bowl, combine flour, brown sugar, baking powder, and baking soda. Cut in butter until particles are fine. (To "cut in" means to manipulate the butter with two knives or a pastry blender until it combines with the flour. The particles should be fine and even, and no butter should be visible in the mixture.)
In another bowl, combine egg, orange juice, sour cream, orange peel, vanilla, cinnamon, nutmeg, and cardamom; add to flour mixture and stir.
Add both kinds of cranberries and walnuts. Pour into pan. Bake 65 to 75 minutes, until done; cool on wire rack.
