Chicken Adobo with Cinnamon and Anise

Ingredients
1  (2-pound) chicken, cut into serving-size pieces
3 tablespoons vinegar
4 tablespoons soy sauce
1  ripe tomato, coarsely chopped
1 teaspoon black peppercorns
4 cloves garlic, minced
1  whole cinnamon stick
1  whole star anise
3  bay leaves
1/2 teaspoon salt, or to taste
Directions
Mix the chicken, vinegar, soy sauce, tomato, peppercorns, garlic, cinnamon stick, star anise, and bay leaves in a 2-quart pot. Allow the ingredients to marinate for 30 minutes.

Cover and cook for 30 minutes over medium heat. Remove the chicken pieces and place under a broiler for 8 to 10 minutes, or until the chicken is tender and lightly browned.

Continue cooking the marinade until it is reduced by half. Add salt to taste. Remove the cinnamon stick, star anise, and bay leaves, spoon the sauce over the chicken, and serve piping hot.
