Origin: Native to southern Europe to central Asia. Cultivated worldwide in Central Europe, in the Mediterranean region, Russia, USA, Morocco, England, France.
Botanical Description: A strong biennial or perennial plant about 1.5-meter (5 ft) high, with square stem, large wooly, oval green leaves, and attractive white or light-violet flowers borne amongst leafy, violet colored bracts.
Method of Extraction: Essential oil is obtained by steam distillation of the flowering tops and leaves. A colorless to pale yellow mobile liquid. Yield 0.7 to 1.5%.
Aroma Profile: Clary Sage has a sweet and herbaceous top note, with a fresh, bittersweet undertone. The dry out note is balsamic and tea-like.
Major Constituents: Linalyl acetate (up to 70%) and linalool (up to 25%), β-caryophyllene, myrcene.
Common Adulterants: Synthetic linalool and linalyl acetate
Regulatory Status: GRAS 182.20
